Cloud Snickerdoodles & More!

Alright, y’all. It’s been a week since Thanksgiving, and Christmas is well on its way. It’s time to start thinking seriously about food again. (That is, if you’re not the type of person who wakes up everyday thinking about what’s for dinner anyway… I am.)

And here’s what I mean when I say “time to start thinking seriously about food”:

I’m about to share my recipe for Cloud Snickerdoodles with you (I shared this recipe with you several months ago, but if you’re new around here, you might have missed it.) AND THEN I’m going to share ten more cookie recipes with you from other bloggers! (One is actually a dog treat recipe so your furry friends can join in on the snacking!)  Lecy from A Simpler Grace has had this little internet cookie swap in the works for several months now, and naturally I jumped at the opportunity to join in. After all, I did grow up in a house where the appropriate serving size was 8 cookies, so you could say I take them pretty seriously.

I developed this snickerdoodle recipe because I wanted a made-from-scratch cookie with a cake-mix cookie texture. We won’t be skipping out on sugar, butter, or any of the good stuff here, but we will be skipping the boxed cake mix and all the additives that can come with it. The result is this cookie with the sweet cinnamon flavor of a traditional snickerdoodle, but with a texture that’s  fluffy and light rather than chewy. Are you craving a plate of cookies yet? Cloud Snickerdoodles

  • 1/2 cup (1 stick) butter, softened
  • 8 ounces cream cheese, softened
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups granulated sugar
  • 1 tsp cinnamon (plus an extra 3/4 tsp for rolling)
  • 1 tsp salt
  • 1 tablespoon + 1 teaspoon baking powder
  • 2 1/2 cups flour
  • 1/3 cup powdered sugar (for rolling)
  1. Using a hand mixer, combine butter, cream cheese, egg, and vanilla. Add sugar, and continue mixing.
  2. Add cinnamon, salt, baking powder, and flour, and mix completely. Dough should be soft and not too sticky.
  3. Add powdered sugar and 3/4 tsp cinnamon to a small bowl.  Roll cookie dough into balls slightly larger than 1 inch in diameter, and coat in cinnamon sugar mixture.
  4. Bake at 350 for 10-14 minutes.  Tops of cookies should crack.  Once removed from oven, allow cookies to remain on baking sheet for another 3-4 minutes to finish cooking.

Yields about 4 dozen, perhaps more if you eat less dough than I did.
