Chocolate Banana Snack Bites
I’ve been seeing these so-called “energy bites” or “energy balls” around Pinterest for a couple years now, but I’d put them on my mental back burner. Honestly, I don’t think I ever even saved them to my boards. All the posts about them were claiming that you only had to eat one of them for a snack, and I’m really not that interested in tiny snacks. If I’m gonna snack, I’m gonna snack hard. The only exception is when I reach for a spoonful of peanut butter to tide me over if I’m hungry an hour before lunch or dinner.
I was about to go for the jar of peanut butter the other day when the idea of the “energy bites” hit me. I mean, it’s basically a spoonful of peanut butter with some extra ingredients, right? The food processor came out of the cabinet, and I started grabbing everything imaginable that sounded appropriate to combine with peanut butter. Moments later, my first little hodge-podge energy bites were born! I hadn’t measured anything, and I’d adjusted the ratios a few times to get the consistency right. I made about ten, and we’ve since consumed them all.
For the first time in my life, I understand the hype. They’re seriously delicious. And for as tiny as they are, they’re pretty filling. I’m not sure I can call them energy bites because I can’t attest to having felt tremendous amounts of energy after consuming them. (However, I wasn’t planning on doing a blog post today, but then I ate two of those little guys, and here I am…) “Snack bites” though? I think yes.
This is actually the second batch of snack bites I’ve made, and to make them more blog-worthy, I kept my ingredients a little less everything-but-the-kitchen-sink. Oliver loves everything peanut butter + banana, so I began with that idea but eventually decided on cashew butter, which he also loves. I spent about ten minutes making a dozen, and we’ll be able to snack on them for a few days.
Dust off those food processors, y’all.

Chocolate Banana Snack Bites
Grab & go gluten-free energy bites with banana, nut butter, chocolate chips, and more! Great for a sweet treat or a quick snack.
- 3/4 cup oats
- 1/2 a banana
- 2 tbsp cashew butter or peanut butter
- 1 1/2 tsp chia seeds
- 1 1/2 tbsp mini chocolate chips
- 1 tsp honey
- 3/4 tsp cinnamon plus extra for rolling
Add all ingredients to food processor and pulse until oats are chopped smaller and all ingredients are well-incorporated.
Add extra cashew butter if too dry or extra oats if too wet. The consistency you should be looking for is a semi-crumbly dough that holds together well when molded into a ball.
Roll dough into about a dozen 1" balls. Roll each ball in extra cinnamon if desired.
Store in refrigerator until ready to enjoy.
