Balsamic Onion & Goat Cheese Salad

I’m aware that this salad sounds a little pretentious. Read its name again. Balsamic Onion & Goat Cheese Salad. Doesn’t it sound like kind of a snob? I mean, with its first impression being a name like that, I’m not totally sure I’d want to be friends with this snobby salad. I think something like a pasta salad just sounds much more approachable.

But you know what? Sometimes you have to give pretentious-sounding people… I mean, salads… a chance because first impressions aren’t everything. Personally, I’m very glad I decided to give this salad a chance.

Next time I host a dinner party and serve some kind of main dish with a fancy French name like bouef Bourguignon à la mode (Not really, yall. That’s beef stew with ice cream.), this salad is going to be the first course. But who am I kidding? When we have people over for dinner, I serve the oh-so-approachable and non-snobby taco.

If, however, you are hosting a fancy dinner party to impress your friends, here’s the salad for you. Or if, like me, you just think roasted balsamic onions, sun dried tomatoes, and goat cheese sound like the perfect trio, this salad is also for you.

Start by slicing a whole red onion and scattering it on a baking sheet. Drizzle it with a couple tablespoons of balsamic vinegar and olive oil, sprinkle it with a little salt and pepper, and pop it in the oven for a few minutes. The onions will become tender and fragrant. And by “fragrant” I mean your kitchen will smell incredible.

Roasted balsamic red onions for topping a salad with red leaf lettuce, goat cheese, sun dried tomatoes, and a simple vinaigrette.

Let those onions cool for a bit and start chopping up your lettuce and crumbling some goat cheese. I used a honey goat cheese for fun, but feel free to use plain or any flavor that sounds good to you. I don’t think you can go wrong with goat cheese.

Mix up a quick vinaigrette, grab your sun dried tomatoes, and throw it all together. Enjoy your snobby salad!

Balsamic Onion & Goat Cheese Salad

Ingredients

for the salad

  • 1 head red leaf lettuce (washed & dried)
  • 1 small red onion
  • 1/3 cup sun dried tomatoes
  • 4 oz. goat cheese (any flavor; I used honey.)
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • salt & pepper

for the dressing

  • 3/4 tsp dijon mustard
  • 2 tbsp balsamic vinegar
  • 6 tbsp olive oil

Instructions

  1. Preheat oven to 375. Slice onion and scatter on a baking sheet. Drizzle with balsamic vinegar and olive oil, then sprinkle with salt and pepper. Bake for 12 to 14 minutes. Onions should be fragrant and tender.

  2. Chop lettuce into bite-sized pieces and top with crumbled goat cheese and sun dried tomatoes. Allow onions to cool for several minutes before adding them to the salad.

  3. For the vinaigrette, add the dijon mustard and balsamic vinegar to a measuring glass or jar. Whisk with a fork to combine. Slowly pour in the olive oil while continuing to whisk until combined.
