Cheesy pineapple pizza in fun roll-up form.
Stir sugar and yeast into warm water. Let sit for 10 minutes. Yeast should be foamy.
Mix in salt and flour, starting with 2 1/2 cups of flour and adding more if it's still too sticky to work with. Knead for about 3 minutes until dough is smooth. Grease a bowl with olive oil and place the dough inside. Cover with a kitchen towel and let rise in a warm place for two hours.
Stretch the dough into a rectangle (approximately 10 x 13 inches). Brush with the olive oil, then spread with pizza sauce and top with cheese and pineapple. Roll it up, starting from one 10-inch end and moving to the other. (In other words, your completed roll will be 10 inches long rather than 13 inches.) Pinch the edge against the roll to seal.
Cut the roll into 8 equal slices. Grease a pie dish or similar baking dish, and nestle the pizza buns inside. Cover loosely with plastic wrap and let rest in a warm place for 30 minutes. Preheat the oven to 350.
Remove the plastic wrap, and bake for 25 to 30 minutes. Sprinkle with extra parmesan cheese before serving if desired.
